The easiest cookie

One of the easiest cookies to make is a classic shortbread cookie. Here’s a simple recipe:


1 cup (2 sticks) unsalted butter, softened
1/2 cup granulated sugar
2 cups all-purpose flour
Optional: 1/2 teaspoon vanilla extract or other flavorings of your choice


  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease it.
  • In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  • Gradually add the flour to the butter mixture, mixing until a soft dough forms. If desired, stir in the vanilla extract or other flavorings.
  • Once the dough comes together, shape it into a ball and transfer it to a lightly floured surface.
  • Roll out the dough to about 1/4 inch thickness. Use cookie cutters to cut out shapes or simply slice the dough into squares or rectangles using a knife.
  • Place the cut-out cookies onto the prepared baking sheet, spacing them a couple of inches apart.
  • If desired, prick the tops of the cookies with a fork for a classic shortbread look.
  • Bake the cookies in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
  • Remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
  • Once cooled, store the cookies in an airtight container at room temperature.
  • Enjoy these simple and delicious shortbread cookies with a cup of tea or coffee, or decorate them with icing or sprinkles for a festive touch!
