Ingredients & Directions:

Three medium-ripe bananas
3 eggs
250 grams of flour
150 grams of sugar
60 milliliters of milk
80 grams of butter
15 milligrams of sugar-reactive yeast
1 teaspoon of vanilla essence
A dash of salt

Get Ready:

  1. Chop the bananas and place them in a bowl. Using a fork, mash them until they become a puree-like consistency. Save this banana puree for later use as the cake’s foundation.
  2. Place the eggs in a separate basin and whisk them vigorously until they have doubled in size. After the butter has melted in the microwave, add the sugar, milk, vanilla essence, and salt. Toss in the remaining ingredients and beat until combined.
  3. Pour the flour and yeast mixture over the dough. To ensure complete integration, stir everything once more. At this stage, add the reserved banana puree and combine thoroughly.
  4. Spread some butter on a baking sheet and transfer the dough into it. Place the mold in an oven preheated to 190ºC and bake for approximately 40 minutes.
  5. Lastly, use a toothpick to pierce the cake. It is complete if it comes out clean. If not, continue baking it for a little longer. After taking it out of the oven, let it cool and compress for about an hour to ensure it is cooked through.
