Two cups of all-purpose flour

One cup granulated sugar

A teaspoon baking powder

Half teaspoon baking soda

A half teaspoon salt

Half cup melted unsalted butter

2 eggs

One teaspoon vanilla extract

(20-ounce) can crushed pineapple, drained.

Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.

In a large bowl, add sugar, baking powder, baking soda and salt. Mix the flour with these ingredients.

Add the eggs, melted butter and vanilla extract into the dry ingredients and mix well together.

Fold gently until crumbs of pineapples are evenly distributed throughout the batter.

Spread it out evenly in the ready baking dish after pouring into it the batter.

Bake this at 25-30 minutes in an oven which has been preheated or until it comes out clean when toothpick is inserted into its center.

Slice cake bars only when they have completely cooled down.

Serving and Storage Tips:

Serve Pumpkin Dump Cake warm or at room temperature.

Store any leftovers in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to a week.

Tips for Success:

Ensure that the crushed pumpkin is strained well so that there are no excess moistures inside the batter.

When pineapple is added, don’t mix it too much because we shall end up with a tougher texture than desired.

To make it more enjoyable sprinkle some shredded coconut or nuts over the top of your batter before baking.

Health Benefits:

Pineapple contains a high amount of vitamin C, manganese, and antioxidants that help protect against inflammation and support immune system health. Using unsalted butter instead of salted butter while controlling sugar content allows for better control of overall calorie and fat intake.

Varieties and Replacements:

  • Flour Variation: Instead of using only all-purpose flour, try using half all-purpose flour and half whole wheat flour. This change will add a nutty flavor and increase the fiber content, making the bars a bit healthier.
  • Sugar Substitution: Consider using coconut sugar or honey instead of granulated sugar. Coconut sugar has a lower glycemic index than granulated sugar, which is beneficial for those monitoring their glucose levels. Honey will also give the bars a natural sweet taste and moistness.
  • Fruit Alternatives: Although crushed pineapple is the main ingredient, you can experiment with other fruits for variation. Try adding diced mangoes, sliced bananas, canned mandarin oranges, or any other fruit that pairs well with pineapple. Make sure to drain any excess liquid from canned fruits before adding them to the batter.
  • Nutty Addition: Incorporate some chopped nuts such as walnuts, pecans, or almonds into the mixture to add crispness and a nutty flavor to the bars. Sprinkle them on top of the batter before baking for an extra layer of deliciousness.
  • Coconut Flakes: To create a tropical sensation, add some shredded coconut to the batter. Mix it with the other dry ingredients before adding the wet ones. Toasting the coconut enhances its flavor and adds a pleasant crunch to the bars.
  • Flavor Enhancements: Use spices like cinnamon, nutmeg, or ginger to add warmth and depth to the flavor profile. A small amount of any preferred spice can heighten the taste of the bars, especially when combined with sweet pineapple.
  • Dairy-Free Option: If you are lactose intolerant or following a dairy-free diet, replace the melted butter with warmed coconut oil or vegetable oil. Ensure the oil is in liquid form before adding it to the batter.
