Big Apple Donuts: A Delightful Treat
Apple fritters remind me of various moments in my life, and they are all wonderful memories! Family trips, summer fairs, a small local store close to our home that sold freshly made treats in a paper bag, and my mom who would make them for us as a special treat.
Ingredients:
- 1 1/2 cups of all-purpose flour
- 1/4 cup of sugar
- 2 tablespoons of baking powder
- 1/2 teaspoon of salt
- 1 1/2 teaspoons of cinnamon
- 1/3 cup of milk
- 2 eggs
- 3 tablespoons of applesauce
- 2 large Granny Smith or Honeycrisp apples, peeled, cored, and diced
- Canola oil for frying
For the Frosting:
- 2 cups of powdered sugar
- 1/4 cup of milk
- 1/2 teaspoon of vanilla extract
Steps: How to Prepare Big Apple Donuts
- Put cooling racks on baking sheets lined with wax paper. Set aside.
- In a large mixing bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon.
- In another bowl, mix the milk, eggs, and applesauce until well combined.
- Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
- Fold in the diced apples.
- In a large pot or deep fryer, heat canola oil to 375°F (190°C).
- Using a large spoon or ice cream scoop, carefully drop spoonfuls of the batter into the hot oil.
- Fry the fritters in batches, turning occasionally, until golden brown and cooked through, about 4-5 minutes per batch.
- Remove the fritters with a slotted spoon and place them on the prepared cooling racks to drain excess oil.
- In a small bowl, whisk together the powdered sugar, milk, and vanilla extract to make the frosting.
- While the fritters are still warm, drizzle or dip them in the frosting.
- Allow the frosting to set before serving.
