Creamy Coconut Milk Pudding

Ingredients:
- 1 can of coconut milk (400 ml)
- 1 cup of whole milk or any type of milk you prefer
- 1/3 cup of sugar
- 1/4 cup of cornstarch
- 1 teaspoon of vanilla extract
- A pinch of salt
- Toasted coconut flakes for garnish
Preparation:
- Combine Ingredients: In a medium saucepan, whisk together the coconut milk, whole milk, sugar, cornstarch, and a pinch of salt until the cornstarch is fully dissolved.
- Cook: Place the saucepan over medium heat and cook, stirring continuously, until the mixture thickens and starts to boil. This will take approximately 5 to 8 minutes. Once it begins to boil, continue stirring and cook for an additional 1-2 minutes.
- Add Vanilla: Remove the saucepan from the heat and stir in the vanilla extract.
- Cool: Pour the pudding into small bowls or a large bowl. Let it cool slightly, then cover with plastic wrap (ensure the wrap touches the surface of the pudding to prevent a skin from forming). Refrigerate for at least 2 hours, or until completely chilled.
