Low Carb Cheesy Onion Ring Chips: A Guilt-Free Snack

Ingredients
- 2 big onions, cut into thin slices
- 1 cup almond flour
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/4 teaspoon cayenne pepper (if you want a spicy flavor)
- Salt and pepper to taste
- 2 large eggs, beaten
- 2 cups grated mozzarella or cheddar cheese
Instructions
- Heat your oven to 400°F (200°C) and cover a baking sheet with parchment paper.
- Cut your onion slices into separate pieces.
- In a flat container, combine almond flour with paprika, garlic powder, cayenne pepper, salt, and pepper.
- In another flat dish, beat the eggs well.
- Dip each slice of onion in the egg, let the extra drip off, and then cover it with the almond flour mix.
- Put the onion slices covered in the mixture on the baking sheet that has been prepared, making sure to leave some space between each slice.
- Put a lot of shredded cheese on top of each circle, making sure most of it stays on the onions and not on the baking sheet.
- Cook in the oven for 12-15 minutes until the cheese is melted and turns golden brown.
- Let the onion ring chips cool down for a bit before taking them off the baking sheet using a spatula.

- If you don't have almond flour, you can use coconut flour or another low-carb flour instead. Just remember that coconut flour absorbs more liquid, so you might need to use less of it.
