Tasty Apple Fritter Bites
I wanted to share these tasty apple fritter bites with you today because they are a special treat for the fall season. These fritters are similar to doughnuts, full of apple flavor, very light, and topped with a tasty apple cider glaze. Since they are baked instead of fried, you might feel a bit better about having more helpings!
When my friend Courtney gave me a copy of Baker Mama's new cookbook, Brilliant Bites, I tried these delicious small snacks for the first time. When I saw the name of the recipe, I immediately wanted to prepare it.

These tasty treats are full of tender, fresh pieces of apple, with a tangy and sweet coating that creates a special, irresistibly crunchy outer layer. And the best part? Since they are baked instead of fried, you can enjoy a few without any guilt!
Ingredients
- Nonstick cooking spray
- 1 1/2 cups flour
- 1 teaspoon baking powder
- 1 teaspoon kosher salt
- 1 teaspoon ground cinnamon
- 1/4 cup unsalted butter, melted
- 3/4 cup white sugar
- 1 large egg
- 1/2 teaspoon vanilla extract
- 1/2 cup unsweetened applesauce
- 2 medium Honeycrisp or Gala apples, finely diced
- 2 cups powdered sugar
- 1/3 cup plus 2 tablespoons apple juice or cider
Instructions
- Preheat the oven: Heat the oven to 400°F. Lightly spray a baking sheet with nonstick cooking spray.
- Mix dry ingredients: In a medium bowl, combine the flour, baking powder, cinnamon, and salt.
- Mix wet ingredients: In a large bowl, whisk together the sugar and melted butter until well combined. Add the egg, vanilla, and applesauce, mixing until smooth.
- Combine mixtures: Gradually add the dry ingredients to the wet mixture, stirring until just combined. Gently fold in the diced apples.
- Scoop batter: Drop spoonfuls of batter onto the prepared baking sheet, spacing them evenly apart.
- Bake and broil: Bake for 10 minutes, then remove from the oven and set the broiler to high.
- Make glaze: While the fritters bake, mix the powdered sugar with the apple juice or cider until smooth.
- Glaze and broil: Drizzle the warm fritters with the glaze, letting it drip down the sides. Broil for 2-4 minutes, or until the glaze begins to bubble and caramelize. Move the pan around frequently to avoid burning.
- Final glaze: Remove from the oven and generously coat the fritters with any remaining glaze.
- Cool and serve: Allow the glaze to set for 15 minutes before serving. Enjoy!
