Banana Coconut Bread
This delicious banana coconut bread is perfect for a sweet treat! Here’s how you can make it:
List of Items Needed:
- 2 cups of all-purpose flour
- 3/4 teaspoon of baking soda
- 1/2 teaspoon of salt
- 1 cup of white sugar
- 1/4 cup of soft butter
- 2 large eggs
- 1 1/2 cups of mashed ripe banana (approximately 3 bananas)
- 1/4 cup of plain low-fat yogurt (or pina colada flavored if preferred!)
- 3 tablespoons of dark rum or apple cider
- 1/2 teaspoon of vanilla extract
- 1/2 cup of shredded sweetened coconut
For the Glaze:
- 1 tablespoon of shredded sweetened coconut
- 1/2 cup of icing sugar
- 1 1/2 tablespoons of fresh lime or lemon juice
Preparation:
- Preheat the oven to 350°F (175°C).
- Measure the flour without packing it down and level it off with a knife. Whisk together the flour, baking soda, and salt in a bowl.
- In a large bowl, combine the sugar and butter. Mix with a mixer on medium speed until well blended.
- Add the eggs one at a time, mixing well after each addition.
- In a separate bowl, mix the banana, yogurt, rum, and vanilla until well combined.
- Gradually add the flour mixture to the banana mixture, mixing at low speed until just combined. Stir in 1/2 cup of coconut.
- Pour the batter into a loaf pan (9 x 5 inches) that has been sprayed with cooking spray. Sprinkle 1 tablespoon of coconut on top.
- Bake in the preheated oven for 1 hour, or until a toothpick inserted into the center comes out clean. Allow the pan to cool for 10 minutes on a rack before removing the bread from the pan.
- For the glaze, whisk together the icing sugar and lime or lemon juice. Pour over the warm bread.
- Let the bread cool completely on a wire rack before slicing.
