Fluffy Vanilla Muffin Recipe

Ingredients:

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 1 cup milk

Instructions:

Preheat Oven and Prepare Muffin Tins:

  1. Preheat your oven to 375°F (190°C).
  2. Line a muffin tin with paper liners or grease with butter or cooking spray.

Mix Dry Ingredients:

  1. In a medium bowl, whisk together the flour, baking powder, and salt.

Cream Butter and Sugar:

  1. In a large bowl, beat the butter and sugar together until light and fluffy, about 3-4 minutes.
  2. Add the eggs one at a time, beating well after each addition.
  3. Stir in the vanilla extract.

Combine Ingredients:

  1. Alternately add the dry ingredients and milk to the butter mixture, starting and ending with the dry ingredients. Mix until just combined; do not overmix.

Bake:

  1. Spoon the batter into the prepared muffin tins, filling each cup about 3/4 full.
  2. Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  3. Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

These muffins are perfect for a quick breakfast or a comforting snack. Customize them by adding chocolate chips, blueberries, or a crumb topping before baking for an extra special touch!
