Homemade Fried Rice
This homemade fried rice is better than takeout and can be ready in just 20 minutes!
List of Ingredients:
- 3 eggs, whisked gently
- 1 large carrot, peeled and cut into small pieces
- 2 teaspoons of sesame oil
- 1 small white onion, diced
- 3 cloves of garlic, finely chopped
- 1 cup of frozen peas
- 3 tablespoons of butter, separated
- 4 green onions, cut into small pieces
- 1/4 cup of soy sauce (add more if needed)
- 3 teaspoons of oyster sauce
- 4-5 cups of cooked and cold rice
- Salt and pepper to taste
Instructions:
- Heat a large pan or wok over medium heat. The author mentions using both a nonstick and a regular pan but leans towards a nonstick pan for this recipe. Add 1 tablespoon of butter to the pan. Once the butter has melted, add the lightly beaten eggs. Cook for about 30-40 seconds or until firm, then scramble. Remove the eggs from the pan and set aside.
- Add the remaining butter to the pan. Once hot, add the carrot and onion. Cook until softened. Add the garlic and cook until fragrant, being careful not to let it brown.
- Increase the heat slightly and add the cold rice and peas. Cook for about 3-4 minutes until the mixture starts to sizzle and brown slightly.
- Stir in the cooked eggs, green onions, soy sauce, sesame oil, and oyster sauce. Continue to cook for a few more minutes until everything is heated through. Season with salt and pepper to taste.
- Serve immediately and enjoy!
