Hearty Beef Stew
This hearty beef stew is rich, comforting, and perfect for a cozy meal. Tender beef, flavorful vegetables, and a savory broth make this dish a family favorite!
Ingredients
- 2 pounds beef chuck roast, cut into 1-inch cubes
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 3 tablespoons all-purpose flour
- 4 cups beef broth
- 1 cup red wine (optional)
- 2 tablespoons tomato paste
- 1 teaspoon Worcestershire sauce
- 2 bay leaves
- 1 teaspoon dried thyme
- 4 large carrots, peeled and cut into chunks
- 4 large potatoes, peeled and cut into chunks
- 1 cup pearl onions, peeled
- 1 cup button mushrooms, halved
- 1 cup frozen peas (optional)
- Fresh parsley, chopped (for garnish)
Instructions
Step 1: Season and Brown the Beef
- Season the beef cubes with salt and pepper.
- In a large pot or Dutch oven, heat the olive oil over medium-high heat.
- Brown the beef cubes in batches, ensuring they are well-browned on all sides. Remove the beef from the pot and set aside.
Step 2: Sauté Onions and Garlic
- In the same pot, add the chopped onion and cook until softened, about 5 minutes.
- Add the minced garlic and cook for another 1-2 minutes until fragrant.
Step 3: Add Flour and Liquid
- Sprinkle the flour over the onions and garlic, stirring constantly for about 2 minutes.
- Gradually add the beef broth and red wine (if using), stirring to combine and avoid lumps.
Step 4: Add Tomato Paste and Seasonings
- Stir in the tomato paste, Worcestershire sauce, bay leaves, and dried thyme.
Step 5: Combine and Simmer
- Return the browned beef to the pot. Bring the mixture to a boil, then reduce the heat to low.
- Cover and let it simmer for about 1 hour, stirring occasionally.
Step 6: Add Vegetables
- Add the carrots, potatoes, pearl onions, and mushrooms to the pot.
- Continue to simmer, covered, for another 30-40 minutes, or until the vegetables and beef are tender.
Step 7: Final Touches
- If using frozen peas, add them in the last 5-10 minutes of cooking.
- Adjust seasoning with additional salt and pepper if needed.
Step 8: Serve
- Remove the bay leaves.
- Serve the stew hot, garnished with freshly chopped parsley.
