Cowboy Stew with Potatoes and Meatloaf
This delicious meatloaf and creamy potatoes in this dish make for a filling and enjoyable dinner. Easy to throw together, this recipe is great for a midweek supper.
Ingredients
- 1 pound ground beef
- 1 chopped onion
- 2 minced garlic cloves
- 1 cup breadcrumbs
- 1 cup ketchup
- 1/4 cup Worcestershire sauce
- 2 teaspoons dried thyme
- 1 teaspoon salt
- 1 teaspoon pepper
- 4 large potatoes, thinly sliced
- 1 cup shredded cheddar cheese
- Freshly chopped parsley, optional for garnish
Directions
- Preheat the Oven: Grease a 9×13 inch baking dish and preheat your oven to 375°F (190°C).
- Prepare the Meatloaf Mixture: In a large bowl, combine the ground beef, chopped onion, minced garlic, breadcrumbs, ketchup, Worcestershire sauce, thyme, salt, and pepper. Mix thoroughly until all ingredients are well combined.
- Layer the Casserole: Spread half of the sliced potatoes evenly in the greased baking dish. Shape the meat mixture into a loaf and place it on top of the potato layer. Cover the meatloaf completely with the remaining sliced potatoes.
- Cheesy Bake: Cover the dish with foil and bake for 45 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the potatoes are tender and the cheese is melted and bubbly. Top with shredded cheddar cheese during the last few minutes of baking.
- Serve: Allow the dish to cool slightly before cutting and serving. If desired, sprinkle freshly chopped parsley on top for garnish.
