Mini Meatloaf Muffins


 

Mini Meatloaf Muffins are a delicious and convenient twist on traditional meatloaf. These savory bites are perfect for a quick meal or as an appetizer for gatherings. With a flavorful mix of ground beef, spices, and a tasty topping, they are sure to be a hit!

Ingredients:

  • 1 1/2 pounds ground beef
  • 1/2 cup chopped onion
  • 1/2 cup chopped bell pepper
  • 2 teaspoons Worcestershire sauce
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon Dijon mustard
  • 1/4 cup barbecue sauce
  • 2/3 cup bread crumbs
  • 1 teaspoon Italian seasoning
  • 1 teaspoon powdered garlic
  • 1 large egg
  • Salt and pepper to taste

For the Topping:

  • 1/4 cup barbecue sauce
  • 1/4 cup ketchup
  • 1 tablespoon honey

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix together the ground beef, breadcrumbs, egg, ketchup, and seasonings until well combined.
  3. Divide the mixture equally into a greased muffin tin, filling each cup to the top.
  4. Mix the ingredients for the topping and spoon it over each mini meatloaf.
  5. Bake for 25-30 minutes, or until fully cooked and golden brown.
  6. Let them cool for a few minutes before removing from the muffin tin.
