Peanut Butter Cookies
These classic peanut butter cookies are soft, chewy, and incredibly easy to make. Perfect for satisfying your sweet tooth!
Ingredients
- 1 cup creamy peanut butter
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F. Line a large baking sheet with a silicone baking mat or parchment paper. Set aside.
- In the bowl of a stand mixer, or in a large bowl using a hand mixer, beat the peanut butter, granulated sugar, and brown sugar on high until creamy and smooth, about 2-3 minutes.
- Add the egg and vanilla extract, and mix until combined.
- Using a heaping tablespoon of dough, roll into 1 1/4-inch balls and place on the prepared baking sheet, about 2-3 inches apart.
- Use a fork to press the cookies down, creating a cross-hatch pattern.
- Bake in the preheated oven for about 8 minutes.
- Let the cookies cool completely on the baking sheet before removing them.
- Store in an airtight container and enjoy!
