Mango Coconut Chia Pudding with Fresh Fruit Topping
Ingredients:
For the Chia Pudding:
1/4 cup chia seeds
1 1/2 cups coconut milk (canned or carton)
1 tablespoon maple syrup or honey
1 teaspoon vanilla extract
For the Mango Layer:
1 ripe mango, peeled and diced
1 tablespoon lime juice
1 teaspoon honey or maple syrup (optional)
For Topping:
Fresh berries (strawberries, blueberries, raspberries)
Sliced kiwi or banana
Shredded coconut
Fresh mint leaves for garnish
Instructions:
Prepare the Chia Pudding: In a medium-sized bowl, whisk together chia seeds, coconut milk, maple syrup (or honey), and vanilla extract. Allow the mixture to sit for 5 minutes, then stir again to eliminate any clumps. Cover and refrigerate for at least 4 hours or overnight until it thickens.
Make the Mango Purée: In a blender, combine the diced mango, lime juice, and honey (if using). Blend until the mixture is smooth and creamy.
Assemble the Chia Pudding: Once the chia pudding and mango purée are ready, decide on the layering order. In clear glasses or jars, alternate layers of the coconut chia pudding and the mango purée for a beautiful presentation.
Garnish and Serve: Top the layered parfaits with an assortment of fresh fruits like berries, sliced kiwi, or banana. Sprinkle shredded coconut on top and add a few fresh mint leaves for garnish. Serve chilled for a refreshing treat!
