Ingredients:

  • For the Base Layer:
    • 1 cup all-purpose flour
    • 1/4 cup granulated sugar
    • 1/2 cup unsalted butter, cold and cubed
  • For the Caramel Layer:
    • 1 cup brown sugar
    • 1/2 cup unsalted butter
    • 1/4 cup corn syrup
    • 1/2 cup condensed milk
  • For the Chocolate Topping:
    • 200g dark chocolate, chopped
    • 1 tablespoon butter
    • 1/2 cup chopped walnuts (or nuts of choice)

Instructions:

1. Prepare the Base:

  • Preheat your oven to 350°F (175°C).
  • Line a 9×9 inch baking pan with parchment paper.
  • In a mixing bowl, combine flour and sugar. Cut in butter until the mixture resembles coarse crumbs.
  • Press the mixture firmly into the bottom of the prepared pan.
  • Bake for about 20 minutes or until lightly golden. Remove from oven and let cool slightly.

2. Make the Caramel Layer:

  • In a saucepan over medium heat, combine brown sugar, butter, corn syrup, and condensed milk.
  • Bring to a boil, then reduce heat and simmer, stirring constantly, for about 5 minutes or until the mixture thickens and becomes a deep caramel color.
  • Pour the caramel over the baked base and spread evenly. Allow to set slightly.

3. Prepare the Chocolate Topping:

  • Melt the chocolate and butter together in a bowl over a saucepan of simmering water, or in the microwave in short bursts, stirring between each until smooth.
  • Pour the melted chocolate over the caramel layer, spreading it to cover completely.
  • Sprinkle chopped walnuts over the chocolate before it sets.

4. Chill and Serve:

  • Refrigerate the dish for at least 2 hours to set completely before slicing into squares.
  • Keep stored in an airtight container in the refrigerator.
