Ingredients:
- For the Base Layer:
- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, cold and cubed
- For the Caramel Layer:
- 1 cup brown sugar
- 1/2 cup unsalted butter
- 1/4 cup corn syrup
- 1/2 cup condensed milk
- For the Chocolate Topping:
- 200g dark chocolate, chopped
- 1 tablespoon butter
- 1/2 cup chopped walnuts (or nuts of choice)
Instructions:
1. Prepare the Base:
- Preheat your oven to 350°F (175°C).
- Line a 9×9 inch baking pan with parchment paper.
- In a mixing bowl, combine flour and sugar. Cut in butter until the mixture resembles coarse crumbs.
- Press the mixture firmly into the bottom of the prepared pan.
- Bake for about 20 minutes or until lightly golden. Remove from oven and let cool slightly.
2. Make the Caramel Layer:
- In a saucepan over medium heat, combine brown sugar, butter, corn syrup, and condensed milk.
- Bring to a boil, then reduce heat and simmer, stirring constantly, for about 5 minutes or until the mixture thickens and becomes a deep caramel color.
- Pour the caramel over the baked base and spread evenly. Allow to set slightly.
3. Prepare the Chocolate Topping:
- Melt the chocolate and butter together in a bowl over a saucepan of simmering water, or in the microwave in short bursts, stirring between each until smooth.
- Pour the melted chocolate over the caramel layer, spreading it to cover completely.
- Sprinkle chopped walnuts over the chocolate before it sets.
4. Chill and Serve:
- Refrigerate the dish for at least 2 hours to set completely before slicing into squares.
- Keep stored in an airtight container in the refrigerator.
