Potato, Bacon, and Cheese Muffins


 

Ingredients

  • Potatoes: 2 medium (about 400 g), boiled and mashed
  • Bacon: 6 slices, cooked and crumbled
  • Cheddar Cheese: 1 cup (100 g), shredded
  • All-Purpose Flour: 1 cup (125 g)
  • Baking Powder: 1 teaspoon
  • Salt: ½ teaspoon
  • Black Pepper: ½ teaspoon
  • Eggs: 2 large
  • Milk: ½ cup (120 ml)
  • Butter: ¼ cup (60 g), melted
  • Green Onions: 2 tablespoons, finely chopped (optional)

Instructions:

  1. Cook the bacon: In a skillet, cook the bacon over medium heat until crispy, about 5-7 minutes. Once cooked, remove the bacon, crumble it into small pieces, and set aside.
  2. Cook the potatoes: Boil the diced potatoes in a pot of salted water until tender, about 10-12 minutes. Drain well, then mash the potatoes until smooth. Let them cool slightly.
  3. Prepare the muffin batter:
    • Preheat your oven to 375°F (190°C) and grease a muffin tin or line it with paper liners.
    • In a large bowl, combine the flour, baking powder, salt, pepper, and garlic powder.
    • In another bowl, whisk together the milk, melted butter, and eggs.
    • Add the mashed potatoes to the wet ingredients and mix until combined.
    • Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
    • Fold in the crumbled bacon, shredded cheese, and chopped chives or green onions (if using).

  4. Fill the muffin tin: Spoon the muffin batter into the muffin tin, filling each cup about 3/4 full.
  5. Bake: Bake for 18-20 minutes, or until the muffins are golden brown on top and a toothpick inserted into the center comes out clean.
  6. Cool and Serve: Let the muffins cool in the tin for a few minutes before transferring them to a wire rack. Serve warm or at room temperature.
