  • 150 grams (1 cup) all-purpose flour
  • 4 eggs
  • 1/8 tsp salt

For the Pastry Cream:

  • 350 ml (1 1/2 cup) cold milk
  • 30 grams (3 3/4 tbsp) corn starch
  • 100 grams (1/2 cup) sugar
  • 75 grams (1/3 cup) butter at room temperature
  • 200 ml (3/4 cups + 2 tbsp) heavy whipping cream, cold
  • 1 tsp vanilla extract

For the Chocolate Glaze:

  • 150 grams (3/4 cups) chocolate chips
  • 125 grams (1/2 cup plus 2 tsp) heavy cream

Instructions

Prepare the Choux Batter:

  1. Preheat the oven to 400°F (200°C) and line two sheet pans with parchment paper.
  2. In a medium non-stick pot, combine water with salt and bring to a boil.
  3. Add butter and bring to a boil again.
  4. Add flour and whisk vigorously until no lumps remain and the batter thickens, about 1 minute.
  5. Remove the pot from the heat and let the batter cool for 5 minutes.
  6. Whisk in the first egg and mix with a wooden spoon until fully incorporated and no white lumps remain.
  7. Continue whisking in the remaining eggs, one at a time.
  8. Using a pastry bag fitted with a large plain tip (e.g., Wilton #1A), pipe fat lengths of dough (about ¾ – 1 inch thick and 4 inches long) onto the lined baking sheets, leaving 1 inch of space between them.
  9. Bake for 15 minutes.
  10. Without opening the oven door, reduce the temperature to 340°F (170°C) and bake for another 15-20 minutes until eclairs are light golden brown. Remove from the oven and cool on a wire rack.

Prepare the Pastry Cream:

  1. In a small bowl, dissolve the cornstarch in 3-4 tablespoons of milk.
  2. In a small saucepan, add the remaining milk and bring to a simmer. Add 50 grams (1/4 cup) of sugar and stir until dissolved.
  3. When the milk starts to boil, add the dissolved cornstarch and whisk until no lumps remain. Remove from heat and cool until just slightly warm or completely cold.
  4. In a large bowl, beat the butter with the remaining 50 grams (1/4 cup) of sugar and vanilla extract until the mixture turns almost white.
  5. Combine the whipped butter with the milk and cornstarch mixture. Mix well and set aside.
  6. In a large bowl, using an electric mixer, beat the heavy whipping cream until soft peaks form. Fold the whipped cream into the butter and milk cream.
  7. Using the tip of a small knife, cut 3 small Xs along the top of each pastry. Using a small tip (e.g., Wilton tip #32), pipe the pastry cream into the shells through each opening.

For the Chocolate Glaze:

  1. Melt the chocolate chips and heavy cream in a medium saucepan set over a pot with about 1 inch of boiling water.
  2. Whisk until the mixture is smooth. Alternatively, you can heat the chocolate and cream in a microwave for about 30 seconds and whisk until smooth.
  3. Remove from heat and cool for a few minutes.
  4. Dip the top of each eclair into the chocolate glaze and set aside to allow the glaze to harden.

OVEN BAKED CHICKEN PARMESAN

Oven Baked Chicken Parmesan

This delicious Oven Baked Chicken Parmesan recipe is easy and doesn’t require any frying. Because this chicken Parmesan is baked, it is healthy, quick, and easy! Make this crispy baked Parmesan crusted chicken for dinner tonight in about thirty minutes!

BAKED INSTEAD OF FRIED!

I always think of Chicken Parmesan as being a complicated and labor-intensive recipe – but I recently discovered that Oven Baked Chicken Parmesan is not only easy but quick enough for a weeknight dinner!

This is a great chicken breast recipe – cutting the chicken breasts in half lengthwise and then pounding them slightly to make them even thickness will help them cook quickly and really helps you achieve more of a restaurant-quality taste.

Ingredients

  • 2 tablespoons olive oil
  • 2 chicken breasts (about 1 pound of chicken total)
  • 1 egg
  • 1 cup panko bread crumbs
  • 1/2 cup Parmesan cheese (fresh grated)
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 cup marinara sauce
  • 1 ½ cups shredded mozzarella
  • 2 tablespoons minced parsley (optional, for garnish)

Instructions

  1. Line a baking sheet with foil and brush the foil with olive oil. Adjust the oven rack to the second position from the top. Preheat the oven to 400°F (200°C).
  2. Cut the chicken breasts in half lengthwise and pound to even thickness: Cut through the middle of the chicken breast as if you are going to butterfly it, but cut all the way through to make two equal-sized pieces. Place them in a gallon-sized zip-top bag in an even layer, seal it, then pound them to an even thickness using a meat pounder or a rolling pin. You can also place the chicken breasts between two layers of cling wrap instead of a zip-top bag if you prefer.
  3. Pat the chicken breasts dry with a paper towel, then season with salt and pepper.
  4. In one shallow dish, mix together panko bread crumbs, grated Parmesan cheese, salt, pepper, garlic powder, oregano, and black pepper.
  5. In another shallow dish, whisk the egg.
  6. Dip each chicken breast into the egg, then into the bread crumb mixture. Ensure the chicken is fully coated in the crumb mixture, and gently press with your hand to help the crumbs stick. Place the chicken breasts on the prepared baking sheet and repeat with the remaining pieces.
  7. Place the baking sheet in the oven on the second from the top rack. Bake for 15 minutes, or until cooked through.
  8. Flip the chicken, pour 1/4 cup of marinara sauce over each piece of chicken, then top with shredded mozzarella cheese. Place back in the oven. Turn on the broiler and broil for 2-4 minutes, until the cheese is melted and bubbly and the edges of the chicken are browning.

Strawberry Dole Whip Recipe

There's nothing like a delicious treat to make your day better, and our Strawberry Dole Whip is perfect for that. This recipe is based on the popular Dole Whip from theme parks. It's a great treat to enjoy and stay cool in the hot summer weather. It's great for when the family gets together or as a fun treat for the kids when they come home from school. Moreover, it is easy enough for even young children to assist in the kitchen!

Strawberry Dole Whip is delicious by itself, but you can make it even better by adding crunchy granola or a few mini chocolate chips on top. To make it even better, you could serve it with some fresh strawberries or a simple buttery cookie. It also tastes great in a waffle cone if you want to feel like you're at an ice cream shop!

Ingredients:

  • 2 cups of frozen strawberries
  • 1 cup of pineapple juice
  • 1/2 cup of vanilla-flavored almond milk
  • 2 tablespoons of honey or agave syrup (optional, for extra sweetness)

Instructions:

  1. Put the frozen strawberries and pineapple juice in a blender or food processor.
  2. Blend at a high speed until the strawberries are crushed and the mixture becomes smooth.
  3. Pour in the vanilla almond milk and honey (if desired), and blend until everything is well mixed and smooth.
  4. If the mixture is too thick, you can add a bit more almond milk gradually until it reaches the thickness you want.
  5. Serve right away for a creamy texture, or put in the freezer for 30 minutes to an hour for a firmer texture.

Serving Suggestions:

Put the ice cream in bowls or cones and have fun!

Variations and Tips:

  • You can easily change things by using various frozen fruits. Consider using mango or peach for a tropical flavor, or mixed berries for a delicious berry treat.
  • If you don't want to use dairy, you can use coconut or soy milk instead of almond milk.
  • For a more tangy taste, add some fresh lemon or lime juice.
  • If your children are selective about what they eat, you can include them in the cooking process by allowing them to pick their preferred fruits to mix in!

Homemade Garlic Bread Recipe

Garlic bread is a classic side dish that complements a wide range of meals, from pasta to soups. It’s crispy, buttery, and full of garlicky goodness. This recipe will guide you through making delicious homemade garlic bread, similar to the one shown in the image.

Ingredients:

  • 1 loaf of French bread or Italian bread
  • 1/2 cup of unsalted butter, softened
  • 4 cloves of garlic, minced
  • 2 tablespoons of fresh parsley, finely chopped
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 1/4 cup of grated Parmesan cheese (optional)

Instructions:

  1. Preheat the Oven: Preheat your oven to 375°F (190°C).
  2. Prepare the Garlic Butter: In a medium bowl, combine the softened butter, minced garlic, chopped parsley, salt, and black pepper. Mix well until all the ingredients are evenly incorporated.
  3. Prepare the Bread: Slice the loaf of bread into 1-inch thick slices, making sure not to cut all the way through so the loaf stays intact.
  4. Spread the Garlic Butter: Spread the garlic butter mixture generously on each slice of the bread. Be sure to get the butter mixture into all the crevices.
  5. Optional Cheese Topping: If using, sprinkle grated Parmesan cheese over the buttered bread slices for an extra cheesy flavor.
  6. Wrap and Bake: Wrap the loaf of bread in aluminum foil and place it on a baking sheet. Bake in the preheated oven for 15-20 minutes, until the butter is melted and the bread is heated through.
  7. Crisp the Bread: For a crispier texture, open the foil and bake for an additional 5 minutes until the edges are golden brown and crispy.
  8. Serve: Remove the garlic bread from the oven and let it cool slightly before serving. Serve warm as a side dish to your favorite meals.

Tips for Perfect Garlic Bread:

  • Fresh Garlic: Use fresh garlic for the best flavor. Pre-minced garlic from a jar can have a different taste.
  • Bread Choice: A good-quality French or Italian loaf works best for garlic bread due to its sturdy texture.
  • Butter Spread: Ensure the butter is softened to spread easily and evenly over the bread slices.

Enjoying Your Garlic Bread:

Garlic bread is best enjoyed fresh out of the oven, paired with dishes like spaghetti Bolognese, creamy soups, or grilled meats. It’s a versatile side that adds a flavorful crunch to any meal.

  • 1 cup brown sugar
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional, for a little heat)
  • 8 slices bacon, cooked and crumbled
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • Fresh parsley, chopped (optional, for garnish)

Instructions:

  1. Prepare the Chicken: Start by preheating your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.
  2. Pat the chicken tenders dry with paper towels to remove any excess moisture. This will help the seasoning stick better.
  3. Season the Chicken: In a small bowl, mix together the brown sugar, garlic powder, onion powder, smoked paprika, salt, black pepper, and cayenne pepper (if using). Rub the brown sugar mixture all over the chicken tenders, ensuring each piece is well-coated.
  4. Cook the Bacon: If you haven’t already cooked the bacon, do so by frying it in a skillet over medium heat until it’s crispy. Once cooked, transfer the bacon to a paper towel-lined plate to drain, then crumble it into small pieces.
  5. Sear the Chicken: In a large skillet, heat the olive oil and butter over medium-high heat until the butter is melted and bubbling. Add the chicken tenders to the skillet, cooking them in batches if necessary to avoid overcrowding the pan. Sear the chicken on each side for about 2-3 minutes, or until they develop a golden-brown crust. The chicken doesn’t need to be fully cooked at this stage, as it will finish cooking in the oven.
  6. Bake the Chicken: Once the chicken tenders are seared, transfer them to the prepared baking sheet. Sprinkle the crumbled bacon evenly over the top of the chicken tenders. Place the baking sheet in the preheated oven and bake for 10-12 minutes, or until the chicken is fully cooked and reaches an internal temperature of 165°F (74°C).
  7. Serve and Enjoy: Remove the chicken tenders from the oven and let them rest for a few minutes before serving. The brown sugar will have caramelized, creating a sweet and sticky glaze on the chicken. Garnish with freshly chopped parsley if desired. Serve these brown sugar chicken tenders with your favorite dipping sauces, such as ranch, honey mustard, or barbecue sauce. They’re also great with a side of mashed potatoes, roasted vegetables, or a fresh salad.

  • 1 minced clove of garlic
  • Juice of half a lemon
  • 2 teaspoons finely chopped fresh parsley

  • 1 tablespoon snipped fresh chives

Instructions:

  1. Use paper towels to dry the cod fillets, then season them with salt and pepper on both sides.
  2. In a large pan over medium-high heat, bring the olive oil to a shimmering but non-smoking boil.
  3. Gently lay the fish fillets in the pan and sear for about four minutes per side, or until the bottom becomes a golden crisp.
  4. Carefully use a spatula to turn the cod over and continue cooking for an additional three minutes, or until it readily flakes when tested with a fork.
  5. Remove the fish from the pan and place it on a foil-lined platter to keep warm.
  6. In the same skillet, bring to medium-low heat. Cook, stirring occasionally, for about a minute, until the garlic is aromatic and the butter has melted.
  7. Stir in the chives, parsley, dill, and lemon juice after removing the pan from the heat.
  8. Top the heated cod fillets with the herb butter sauce and serve immediately.

Variations and Tips:

  • If you don't like cod, you can use another white fish such as halibut or tilapia.
  • For added flavor, consider incorporating grated lemon zest into the herb butter sauce.
  • Dried herbs can be used in place of fresh ones; however, their flavor is more concentrated, so use them sparingly.
  • While this dish tastes best when eaten right away, it stores well in the fridge or freezer and can be reheated gently in the oven if you have leftovers.
  • To ensure consistent cooking, try to keep the thickness of your fish fillets uniform and avoid overcrowding the pan for a better sear and more flavor.

Ingredients

  • 1 lb ground beef (you can also use ground turkey or chicken)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 large bell peppers (any color), diced
  • 1 large carrot, diced
  • 1 celery stalk, diced
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (14.5 oz) tomato sauce
  • 4 cups beef or chicken broth
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon smoked paprika (optional)
  • 1/2 cup uncooked white or brown rice
  • Salt and black pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley or basil for garnish (optional)

Instructions

Cook the Ground Beef:

  1. In a large pot or Dutch oven, heat 2 tablespoons of olive oil over medium heat. Add the ground beef and cook until browned, breaking it up with a spoon as it cooks. This should take about 5-7 minutes.
  2. Once the beef is fully cooked, use a slotted spoon to remove it from the pot and set it aside. Drain any excess fat from the pot, leaving about 1 tablespoon behind.

Sauté the Vegetables:

  1. In the same pot, add the diced onion, carrot, and celery. Sauté the vegetables over medium heat for about 5 minutes, or until they begin to soften.
  2. Add the diced bell peppers and garlic to the pot. Continue to sauté for another 3-4 minutes until the peppers are tender and the garlic is fragrant.

Add the Tomatoes and Broth:

  1. Pour the diced tomatoes (with their juice) and tomato sauce into the pot. Stir to combine with the sautéed vegetables.
  2. Add the beef or chicken broth to the pot, stirring well to combine all the ingredients.

Season the Soup:

  1. Stir in the dried basil, oregano, thyme, smoked paprika (if using), salt, and black pepper. Adjust the seasoning to taste.
  2. Return the browned ground beef to the pot, mixing it in with the vegetables and broth.

Cook the Rice:

  1. Add the uncooked rice to the pot, stirring to distribute it evenly throughout the soup.
  2. Bring the soup to a boil over medium-high heat. Once it reaches a boil, reduce the heat to low, cover the pot, and let the soup simmer for 25-30 minutes, or until the rice is fully cooked and tender.

Serve the Soup:

  1. Once the rice is cooked, taste the soup and adjust the seasoning if necessary. If the soup is too thick, you can add a little more broth or water to reach your desired consistency.
  2. Ladle the hot soup into bowls and garnish with fresh parsley or basil if desired.

Storage:

  • Leftover soup can be stored in an airtight container in the refrigerator for up to 4 days. To reheat, simply warm it on the stove over medium heat or in the microwave until heated through.
  • This soup also freezes well for up to 3 months. To freeze, allow the soup to cool completely, then transfer it to freezer-safe containers or bags. Thaw in the refrigerator overnight before reheating.

Conclusion

Hearty stuffed pepper soup is a wonderful way to enjoy the comforting flavors of stuffed peppers in a simpler, more convenient form. This soup is packed with nutritious ingredients and is incredibly satisfying, making it an ideal meal for busy weeknights or a leisurely weekend dinner.
